Review: Dageraad Tous les Jours Mixed-Culture Fermented Table Beer

Dageraad Tous les Jours Table BeerDageraad Brewing's Tous les Jours Mixed-Culture Fermented Table beer: The shimmer of sunshine, a sparkle of laughter and a day without cares. Bubbles, herbaceous hops, the mystery of brettanomyces, and a beer without consequences. 

We brewed this lovely little thing for our fellow brewers, to provide a journey for the palate that won't interfere with work. If you are not a brewer, feel free to borrow their beer, but know that we brewed it for them. Tous Les Jours is refermented in the can, so pour with care to leave the yeast sediment in the can. 3.2% ABV

Appearance: (Please don't mind the glass - it's still a good glass but it spent 10 years at a farm with really hard water - the glass itself is clean) Well, I'm not a brewer but I can appreciate the subtle things in life. The beer pours a cloudy to opaque lemon yellow body with a light amount of carbonation in the body and a thick but incredibly carbonated/fizzy white head on top. The head diminishes pretty quickly to leave behind a bit of bubbling but a few bubbles here and there otherwise.

Aroma: I have to say, I've had a bad cold in recent days but I definitely can get a good whiff from this beer - heavy amount of lemon citrus presence, a light-to-moderate amount of Brett to give it a bit of funkiness to it, it's a bit grassy, and has a bit of spiced notes of coriander at the very end. The hops are leafy/floral and a tad bitter, reminiscent of alfalfa. Slight hint of pepper and a slight grapefruit vibe from it as well.

Taste: I'm trying to think what I'm getting - it's a bit of a spiced, peppery presence but also very reminiscent of grapefruit. Definite citrus notes, a hint of coriander, leafy/floral hop presence, hint of lemon. Slight amount of tartness and the Brett gives of a slight funk but nothing intrusive. 

Overall Thoughts: A must try! It turned out much more complex than I was expecting and at 3.2% ABV, it's refreshing and not going to overwhelm yourself if you have two of these. 

What's crazy is that it's been exactly five years since my visit to Dageraad as I'm writing this. Time flies!
